Consumer prices of coffee products have raised steadily throughout the decades; however, the price of green coffee has not changed significantly over the last 100 years (Gregory Dicum and Nina Luttinger : The Coffee Book Anatomy of an Industry From Crop to the Last Drop . The New Press, New York , 1999). This anomaly has resulted in an industry that benefits all of its members except those whose work is indispensable. Clearly, the current state of affairs is unacceptable. If the specialty coffee industry is to survive, we need to change the current conditions, simply because they are not sustainable.
